Wakochas 和紅茶 refers to Japanese Hongchas with milder, more delicate and less astringent flavours comapred to western black tea counterparts, somewhat similar to Taiwanese Hongchas. The Samidori さみどり cultivar was bred from indigenous tea bushes in Uji Kyoto in 1939, favoured for its bright green colour and umami flavour, usually made into gyokuro or matcha . The umami-ness is apparent when over-steeped, but coaxes apple and pear sweetness with dried longans when brewed lightly!
