Taiwanese Shan Lin Xi White Tea 杉林溪白茶Spring 2019

White teas made in Taiwan are considered relatively uncommon! We chanced upon this tea first while visiting our Taichung based tea maker friend, who happened to be visiting Shan Lin Xi Taiwanese Shan Lin Xi White Tea 杉林溪 for a work engagement in Spring 2018 when he made this tea.  We had been requesting for him to make this again and he eventually obliged! This particular batch is harvested from the famous Longfeng Xia 龙凤峡(Dragon Phoenix Gorge), considered one of the highest regions in Shan Lin Xi. We love the lingering sweetness of snow pears and chrysanthemums, but beware! This tea needs to be brewed at a lower temperature of not beyond 90 degrees celcius to bring out the lovely sweetness!
